my mom has a habit of sticking certain desserts in the freezer. we're Persian, she says it's a Persian thing. She sticks nougat and noon badoomi (Persian almond cookies) in there, and it works. You can eat them straight out of the freezer... the nougat gets rigid, not chewy or sticky, and snaps clean in this unique way. but you literally have to eat them straight out of the freezer, if they thaw a little they get extra sticky. The almond cookies stay chewy but feel more dense, so you can really savor them. (also, these are straight up three-ingredient cookies, just almond flour and sugar,and egg whites).
