smashed potatoes w your fave breakfast meat (sausage, bacon, etc), use small potatoes so you can avoid cutting and they cook faster. you can add cheese and veg too. avocado toast is a good one too, and some people add cottage cheese for extra protein. i'm not a cottage cheese fan but there's a lot you can do with it breakfastwise

I’ve been sick and not too hungry or able to cook but now that I’m better I can eat the same breakfast I make most mornings. A toasted piece of sourdough (I only have rye currently though), cottage cheese, Trader Joe’s sweet and spicy pickled jalapeños, and 1-2 fried eggs. Hits the spot every time.

Been in the biggest reading slump because I wasn't vibing with The Idiot by Elif Batuman but desperately wanted to push through bc it got shortlisted for Pulitzer. 65% in, I just had to admit it wasn't for me and abandon it.
