I’m not sure if you will like it but my mum used to make this for me during winter and it has a special place in my heart. Hope you give it a go (if you do let me know how you found it) Sauté half a white or red onion in a pan. Chop 1–2 cloves of garlic and add them in. Add any extra seasoning you like (I love throwing in some red chilies at this stage and cooking them off). Stir in 100g of red lentils. Pour in vegetable stock (a must, or it’ll taste pretty bland!). Simmer until the lentils are fully cooked. It should have a soup-like consistency. Add salt to taste Serve with your favourite sourdough bread. 🥖✨

You can eat them for days in a variety of ways Sauté onion, celery, carrots or PARSNIPS Get some tomato paste and MISO mixed and melted Cumin, paprika, curry mixes Lentils, a cup? Salt obvi Water, enough to cover and then some (you can always add more) Bring to boil, cover, reduce check water levels now and then. should not be soupy, not dry, just a lil saucy wetness Taste W sauce, rice vinegar Taste, chefs kiss? I eat with a side of lemony arugula and topped with an egg dotted w hot sauce Can also reheat the next day, add a bit of goat cheese, make salad w arugula, pass out ur so healthy and amazing and tasty

One pot makes four hearty meals!! Cheap and easy and great to spend an hour on it one night and be sorted for half the week. Brief recipe: Heat oil/butter Finely chop at least three cloves of garlic and warm Throw in some cumin, turmeric, chilli flakes, and any other spices you like (I use a korma blend with different ones in) Keep stirring so garlic doesn't burn and when they're fragrant throw in a cup or so of lentils to toast (I like red unsoaked ones) Add in 1 or 2 sweet potatoes (cubed into small pieces) and keep stirring Throw in a can of good chopped tomatoes Add a cup and a half of hot water and vegetable stock Big stir Bring to a boil Ten minutes later reduce to simmer (goal is to cook off the water) Simmer for five minutes Add in a can of coconut milk and stir Stir in a couple handfuls of kale to wilt Add salt and pepper Once you're satisfied it's reduced enough (around 20 mins cooking time) turn off heat and leave for ten minutes Done! Healthy and delicious
