Move over regular minestrone! I discovered minestrone, my top 5 fav soups, comes in green and I never looked back. You literally just put together your favourite green vegetables and call it a day. I made the mistake of putting in all the pasta into the batch, thus soaking up all the broth so if don't be like me and store them separately.
