it's become a weekly tradition of mine to bake something on wednesday evenings while my favorite d&d show is live, and its so fun to make new things and realize that they aren't that tough to make (most of the time)! i made biscotti for the first time ever yesterday and they weren't perfect, but they weren't nearly as tough to make as i imagined!

i love messy imprecise baking. i sorta measure but it isn't perfect and i don't have the "right" tools. i don't think baking was ever meant to be a scrutinous science. women have baked for years n decades n centuries n made wonderful food for their families without gram scales or 200 dollar mixers. i use a metal chopstick i stole from a restaurant when i was 19 to mix my dough for bread. it works just fine. baking should be cheap and easy and fun and tasty

when it comes to an Italian restaurant you really have to aim for middle-of-the-road. it can’t be too nice. you want BIG plates of pasta and parm dust on everything and unlimited warm but not house-made bread. a waitress with really long coffin nails. photos of famous people on the walls and a group of questionable well-dressed men smoking outside. that’s where the real Italians go and that’s where you’ll have the best dining experience
