I never believed the meal prep hype. I used to prefer cooking a larger dinner and taking leftovers for lunch instead. No leftovers? I'll hop to the nearby supermarket and spend โฌ5 on a "healthy" freezer meal.
However, since the new year started I've been bulk prepping at least 10 days' worth of burritos every other Sunday and it's made my work days much easier to plan for, even if my Sundays are slightly busier. I found a recipe that's healthy, tasty, and pretty low-effort in the meal prepping process. I'll probably play around with flavours in the future, but I like the strategy of just tossing chopped vegetables in the oven for 40 minutes and cooking a black bean filling on the stove for 10. It's all about finding the right burrito "blueprint" that lets you play around with ingredients and flavours when you, inevitably, get bored of eating the same lunch every day. But yes, I'm now part of the bulk-prepping burrito brigade.
