I eat way more eggs this way, adding coriander/cilantro, mayonnaise and pepper/onions/chillis etc. etc. It's fancy egg salad, for sure. Not sure if that's a good or bad thing.

I am obsessed with this humble snack. A sprinkle of salt + pep is all your really need. However if you’re feeling fancy (as you should be):
Cut egg in half and add a tiny squeeze each of dijon mustard + kewpie mayo. Sprinkle of salt + crack of pepper. Tear a green olive and at 1 piece to each half. Deviled egg craving quenched in a quarter of the time. Divine.

I have been going CRAZY for salted eggs, everything I eat simply becomes a Michelin star type dish (TO ME) when I add salted egg to it. I cream the yolks with SOME of the whites (for additional flavor and so you won’t need to add salt) with room temp butter, then I chop up some chili and mix it all up. So far I have added it to chicken wings, marbled potatoes, and garlic butter shrimp. It’s the best thing in life right now. Excites me more than anything.

I call it mustard crackers but it’s a bit more like deconstructed deviled eggs. So I hard boil 1-2 eggs, smash them up with pepper and Dijon mustard. then I get club crackers, or even saltines, and I spread some really good salted butter on them, add the mustard mix, maybe put chili crisp on top and it’s just so good. I’ve been eating this around 3 or 4 pm as a snack recently.

This is what I call it hahahah made by mums everywhere but the greased up version is sold along stalls in Mumbai. Two regular slices of white bread, buttered, and the middle filling is cream cheese with red onions, coriander/cilantro, tomatoes and some minced chillis. All veggies chopped mini cube size so they blend with the cheese. Toasted crispy.
