Sharing from memory so hope it’s right: Lb ground beef 2 cup cooked rice, you can do 1 rice and 1 cup cauliflower rice if you want to be healthier. Or all cauli rice, I personally just don’t like it alone. A couple cups fresh or frozen veggies. I usually get a frozen mix of peas, corn, and carrots for convenience. season with ginger and garlic or use premade fried rice seasoning about 1/4 cup teriyaki and 2 tbl soy sauce or braggs (healthy soy sauce alternative) Mix that all together and top with yum yum sauce. Quick, easy, and delicious.

Put some baby carrots on the side, cut up some avocado and tomato when you have them Rosarita refried beans are good. Trader Joe has frozen rice. Joe also has Kumato tomatoes that are tasty and one or two are perfect for one person. Keep tortillas in the freezer so they don’t get moldy.

Add meat of your choice, if you like. Add avocado if you can afford it. Put salsa on it. Put it in a pan or the oven to make the tortilla toasty sometimes.

I’m a project manager for a prepared food company, and the majority of the projects I work on are soup. We’re mostly private label, so we make the store brand soups in the deli section for most of the big grocery stores. One time at a big meeting our boss got a cameo from the “no soup for you!” Guy from Seinfeld to pump us up (?)
