i recommend eating the bugs (sparingly)
Chapulines on top of guacamole (barebones salt lime and avocado) with cotija and pepitas… I felt like I was channeling ancestral power
Ant brittle is not good. Worm salt is good with mezcal and oranges
Sonoran style Mexican food in San Antonio - think thick tortillas, bits of seafood, moles, etc
Pictured is a aguachile verde w/ red snapper and some kind of martini with mezcal. tacos should be here soon
And my three favorite burritos back home were barbacoa, picadillo, and deshebrada. Barbacoa is probably the most widely available depending on where you live
