He’s such a silly dude. All his cookbooks are more of a guiding light than they are rigid rules. He teaches you how to make some great plates, but by no means does it feel like he’s forcing you to do it exactly his way. I’ve always enjoyed his cooking videos for that reason; it’s never “Boil this for 20 minutes” it’s “Boil this until it feels good.” They’re def more American classic style cooking but I think there’s a plethora of wisdom in his recipes.
