Maybe it’s the historical influence the Moors had on Spain that has me filled with nostalgia because the food I grew up with. Or it might be how earthy, flavorful spicy and light the bites are. I have become reminded how much joy I feel when I eat lentil, chickpea, stews and tagines. Need more dedication to cook these dishes more often at home.
shoutout my moroccan stepmom for putting me on to harira. perfect warm soup with nice spices. basically just lentils, chickpeas, tomatoes, and onions but super tasty, filling, and goes great with some flatbread
smells like being a kid and hanging out in the kitchen for hours with my grandmothers, helping and learning from them. the fragrant base of so many wonderful sauces, soups, and stews.
