1) Sushi rice with cooked onions, peppers, and sausage (veggie or regular). You could also do it with fried eggs. I think it tastes the best with actual sushi rice, but if you don’t have rice vinegar, white or brown rice is good too.
2) Loaded nachos🤤 It has protein and veggies so it counts as a meal for me. I mash up black beans w/ chili powder, garlic powder, salt + pepper then put that on top of chips + cheese. I have a toaster oven, but u could do it in a regular oven or a microwave. Then I put salsa on top, you could do red or green onions, lettuce, cilantro, whatever u want. Don’t be shy with the spices in the beans and it’ll be delicious.
