I love chocolate mousse because it’s chocolate pudding for adults and my mom never let me eat pudding growing up so it feels extra special. Tres leches because I ate it a lot growing up and it’s soft, milky heaven. I’m not a big fan of cakes in general but if you put a slice of tres leches in front of me I’m kicking my feet and giggling.
Emeril’s excellent vibes, his symphonic command of pacing solo cooking a 4 course meal live in front of an audience in 42 minutes, great 90’s/aughts aesthetic, audiences being amazed by ideas like “garlic”, and the Doc Gibbs band. BAM.
