Pho is my go to healing food. Got a tummy ache? Have a pho. Brain running amok? Have a pho. Enduring a hangover from consuming too many pints with people you realise you actually don’t like the night before? Have a pho. It is calming and enlivening in a way i cant quite explain and the one I ate at Da Lat Vietnamese in Randwick is the best I’ve had since moving back to Aus. The noodles: slinky, misshapen, angelic. The broth: salty, sultry, fragrant, light yet heady. The thin strips of raw beef eventually cooked in the steaming soup absorbed the mint, the onion, the liquid: just right. And it’s worth mentioning this place is the perfect Nighthawks-vibesss restaurant. Grab a table for one, a crisp cold Singha and simply dissipate

mmmmm comfort food
its so weird how i sometimes hear it getting hate bc of the smell? it doesn't even really smell bad and mm delicious... really great on a cold winter day, perhaps if you have a cold or are congested... love pho pho real >:) (actually funny enough apparently theres a pho place in charlotte called "pho real" -- amazing pun -- , my airbnb host was telling me abt it during my stay in January and I really wanted to go but never ended up going but if anyone is in charlotte NC pleasee go to pho real and tell me how it was i want to know 😭😭😭🙏)

having just returned from a week in berlin-friedrichshain, i’ll tell you what, i’ve developed a newfound respect for the simplicity in northern vietnamese style pho bo. it came to a surprise to me how many places served pho in east berlin: it must be the legacy of eastern bloc immigration from north vietnam.
the southern, saigon-style pho we are used to eating in the states, at this point, is already called “pho cali*” in vietnam, and hanoi style pho is served without all of the accoutrements and variety of meats like tendon, brisket, flank, etc.
northern pho is simple, contains a clear yet flavorful broth, and is served with just cuts of steak and thicker rice noodles. you’ll be hard pressed to find a shop that serves a bowl like this here. here’s a picture of a bowl i got at berlin’s new flughafen brandenburg.
*this is the ONLY acceptable use of “cali” when one means california. fight me.

Ok I don’t know if I can articulate just how good this recc is but I’ll try. For some reason when the moon is full I can stand and look at it wherever it may be in the sky and just think ahhh everything will be ok. I feel still and calm. I am tiny they are big: a glowing beauteous reassuring orb. I then check on it, consistently peeking out my window through the night to make sure it’s still there. like a parent checking on their bab. I love that it’s there! I love that it affects the oceans. I love that we can see the patterns on its face. If I had to choose between living on the moon or Mars id choose neither because I never not want the chance to see it from afar. I like it as a crescent all the same or when it’s brand new and you see its shadow but god dammit when it’s full it is meaningful and magnificent.
