littlesnarf kind of worked form my head here but basically just regular sweet shortcrust pastry for the base
roast your pistachios or any nuts
Simple chocolate ganache- 1:1.5 ratio chocolate to cream
you can lay the nuts straight on the baked base or pour the ganache in and then sprinkle them (some will sink a bit)

i absolutely am in the right field i feel so much pride when i bring my vision to life on a plate… i’ve been thinking about this for weeks and it finally all came together for my final! this was for my plated desserts class and i got a perfect score!! it feels awesome to be cool calm collected and confident about something you’re passionate about and i’m mostly posting this to document my pride haha. ignore how the miso caramel looks from this angle i promise the color is darker golden beautiful… also i had so many people try it and it felt so good to feed something i’m proud of to people i love… okay that’s all
- sesame maple panna cotta (the speckles are vanilla bean)
