It's beyond easy to make (my method: add chicken in some liquid, simmer 15 minutes, flip, cover and continue to simmer for 15 more mins. its done at 165 degrees F), super easy to customize (add smashed garlic, or fresh herbs, or vegetables or any seasonings) to the liquid (water/broth). A package of chicken breast makes quite a few days for one! When cooled, shred it with 2 forks and keep in the fridge! I like to make it on Monday to last the work week. The options are endless! You can mix it with a creamy dressing for a chicken salad, make it a sandwich, have it over greens as a salad (easy dressing: lemon, dijon mustard, olive oil, salt, pepper, chile flake), wraps, tacos/quesadillas, mixed with pasta, over rice, etc.!

Spatchcocking a whole chicken is my go to because it can last me the week. Seems intimidating at first, but one youtube short later and you can cook a whole chicken in under an hour at 425° F. Plus with the shorter cook time, potatoes, carrots, etc. can go in at the same time, in the same pan. Minimal attention. I eat part of it the day of and usually end up using the chicken breasts for sandwiches or stir fry later.

- chicken breast - onions - pasta of your choice - green and/or red peppers - tomatoes - salt / pepper - heavy cream - shredded cheese or Parmesan preseason your chicken and cook with little oil and medium heat, flip abt every 5-7 minutes until they’re crispy, brown and a little black to your preference ofc When the chicken is done you cut it into slices to your liking (I do straight slices like tenders) You can boil your pasta in a separate pot while the chicken cooks & in the same pan you cooked the chicken, caramelize your onions, and add your veggies & then add your pasta & heavy cream… let everything simmer on low hit for abt 2 minutes & then add your chicken, mix it all together, cover your pan & then let it simmer on low for 5-10 minutes & whenever your ready top it off with your cheese… Let it melt into everything else & then it’s ready!

Works great as a hot dish with a starch or as salad additions! marinades add awesome flavor to the chicken pretty easily- 1/4 cup each red wine vinegar and olive oil, 6 grated garlic cloves, 2.5tsp salt, and a bunch (1tbsp) of dried oregano is roughly the Molly Baz marinade recipe I tried this week on a pack of chicken thighs, and it was great! Added some roasted carrot and rice pilaf for one dinner, then added the carrots and chicken to a salad today. I also have gotten into making a flavorful ground turkey for a base - either taco style and make burrito bowls, tacos even nachos lol OR a larb style (recipe linked) and do a larb bowl with rice or mix the turkey with wavy stir fry noodles or cold rice noodle bowls. If you don’t mind eating things with the same flavor profile for multiple days, there are a bunch of options with these two flavors. I like making things from scratch, but I’ve found using premade marinades and sauces makes it so much easier. I am lactose too- these should all be fine to do without dairy! I just do guac or get lactose free sour cream on the taco nights

I know it sounds crazy, but trust me it's so good! All you need is radishes (sliced into however you want! or keep them whole, that's totally fine!), and just roll them into the butter or use a knife to spread it, and a sprinkle of sea salt, and enjoy! it's so simple, and the flavor and texture combo is out of this world good. delicious thinly sliced radishes with a knife on a mandolin (but be careful!!!) with proscuitto and parsley in a sandwich (or on a flatbread/cracker) as well Also check out Ploughman's lunches!! it's basically that exact vibe and I'm sure there's some inspo on pinterest!

I can't tell you how much I love this app. It's a note taking app, but everytime you enter it, it creates a blank document. it makes it seamless to get thoughts out asap!!! It's super basic and bare bones, but having a blank digital document ready as soon as you click the app seriously makes all the difference! They automatically save and sync to your computer if you have the app on your desktop too, so it's easy to sort through and find things.

one of my favorite journals is my cooking journal! I have one for each specific year and I write in it monthly, in real time. it consists of my grocery lists, farmers market lists, seasonal produce, meal plans for the week, recipe development (i also have a website i'm working on and a future goal is cookbooks so i'm always journaling this as I work on my recipes!!), meals I had out, dishes from cookbooks catching my eye, recipes i want to try... etc. really, everything food and cooking! it's more of a commonplace book of everything food related where I can develop and create recipes! it's fun to write the recipes out, and you have a place to make notes on what works, what didn't work, what to try, etc. Sometimes I even like to journal what playlists are going with the week - it's fun to see it along side all the cooking. it's always a fun look into the seasons too! You can also use it to keep track on recipes / traditions you want to remember!
