Spatchcocking a whole chicken is my go to because it can last me the week. Seems intimidating at first, but one youtube short later and you can cook a whole chicken in under an hour at 425° F. Plus with the shorter cook time, potatoes, carrots, etc. can go in at the same time, in the same pan. Minimal attention. I eat part of it the day of and usually end up using the chicken breasts for sandwiches or stir fry later.

Spatchcocked Roast Chicken is a really tasty easy thing to make for a group of people. You basically just have to figure out how to spatchcock it, which is just taking out the backbone and pressing it down to make it lie flat. The rest is just seasoning it and putting it into the oven for close to an hour and you have a juicy centerpiece protein that goes good with roasted potatoes and a vegetable like brussel sprouts or asparagus

This is one of the items on household menu that makes a comeback at least once every two weeks. Hot take though? This is like a Thanksgiving dinner done in an hour, but better. Also, did you know that a whole chicken is under $10? Anyways, Adam Ragusea is one of my favorite people on Youtube because he bases his cooking philosophy around not having to weigh or measure things. To me, I think it's one of the most painful things about cooking something new for the first time. This is very forgiving recipe, and you're nearly guaranteed an easy and delicious chicken dinner.

It's beyond easy to make (my method: add chicken in some liquid, simmer 15 minutes, flip, cover and continue to simmer for 15 more mins. its done at 165 degrees F), super easy to customize (add smashed garlic, or fresh herbs, or vegetables or any seasonings) to the liquid (water/broth). A package of chicken breast makes quite a few days for one! When cooled, shred it with 2 forks and keep in the fridge! I like to make it on Monday to last the work week. The options are endless! You can mix it with a creamy dressing for a chicken salad, make it a sandwich, have it over greens as a salad (easy dressing: lemon, dijon mustard, olive oil, salt, pepper, chile flake), wraps, tacos/quesadillas, mixed with pasta, over rice, etc.!

It bums me out whenever someone's trying to say something but cuts themselves off or says "nevermind" because they assume that they're wasting time. Think it through, or let it come back to you. 3 years ago, I started saying, "Talk through the thought" with my friend, and I think it's made me more patient, and I've ended up hearing/saying some cool shit (or at least some funny shit) that I would've probably missed out on otherwise.
