preheat oven to 400 F (sry if you’re not american) pick your favorite vegetable. if you choose something big like zucchini, butternut squash, sweet potato, etc., cut it into 1 inch cubes. place your veggies on a lined baking sheet, then hit ’em with the old one two. ONE: drizzle with olive oil TWO: sprinkle with salt and pepper use a rubber spatula or your hands to coat everything evenly. cook time depends on your veggie, but probably somewhere in the 20 min zone. pull them out when they start getting crispy. voila! simple, healthy, tasty veggies. asparagus, green beans, brussel sprouts, carrots, broccolini…like truly the options are endless.

They say to make sure your knife is sharp, and then pound it into the squash with a mallet! And put the squash on a damp towel to keep it in place. My mom said to microwave squash for a minute or two before trying to cut it, and it does make it easier
