1 // DUBU JORIM drain, pat dry, cut into squares, salt, set aside. finely dice jalapeno, yellow onion, garlic - mix with soy sauce, fish sauce, sesame oil, sugar, gochugaru, bit of water. fry the tofu til golden brown on both sides, add the sauce. garnish with green onions. 2 // AIR FRY CRISPY TOFU drain, pat dry, cut into cubes, place cubes in a large mixing bowl. add garlic powder, onion powder, paprika, honestly whatever else you feel like, splash of soy sauce, nutritional yeast OR cornstarch (the nutritional yeast does add a nutty cheesyness to it though). make sure the tofu is evenly coated. air fry at 400 for 10 mins, shake it, another 10 mins, shake it, and then another 5 ish (just keep an eye on how crispy it’s getting and stop when it’s to your preference). eat as snack or as salad topping! 3 // LAZY & ODEN STYLE drain, pat dry, cut into cubes. in a pot, add water (however much you want to make as soup), instant dashi broth, fish cakes, maybe some chopped napa cabbage, and the tofu. eat when everything is boiling.

fry up some garlic, ginger and spring onion (the acc onion part, not the greens). add 1,5tbsp (per liter) of your miso paste of chioce, soy sauce and dashi (bonito broth, but that is optional, but i recommend not skipping). pour water in. bring to boil. add tofu. plate it. add toppings, maybe throw in some udon. its's bangin. trust.

i recently started making this and it’s DELICIOUS and so versatile. fry some tofu with a sauce that u like (i use sweet chilli) boil a pot of water with soy sauce and ginger. when boiling add a vege stock cube and garlic and mix. then add in your veggies of choice (i recommend bok choy or spinach) add some chilli flakes if you like. once that’s getting cooked then add in noodles of choice. i use udon or pad thai rice noodles. add anything you want!!! then add tofu, garnish with green onion or bean sprouts and chilli flakes and you’re done!

• freeze block of tofu • thaw block of tofu • chop tofu and marinate in dry rub for chicken (with olive oil for lubrication) for about 4 hours • bake tofu @ 350 for 40 minutes, flipping halfway • start making peanut sauce from linked page • boil water and make rice noodles • add some kimchi, tofu, noodles to bowl • drown with peanut sauce It’s getting me through

just move towards one thing that makes you happy, one go at a time. if it becomes a pattern, think about what it is about the thing that makes you happy. move towards it, one diy, one event, one forum at a time. also know that you can reinvent yourself hundreds of times in this lifetime, so goals are arbitrary. what matters is that you spend most of your days with at least a bit or a lot of joy. oh also remembering that your career ≠ what fulfils you. sometimes we work just to have $$ to do what we really want to do (cook/draw/knit/make music etc). in the end, your life will be made up of many small moments, so just try to enjoy yourself. at least that’s how i do it :)

once a week i clean out my fridge of anything old and crusty, then i go get groceries. when i get back i have a clean space to work in and then i chop and prep for like 2 hrs. just a bunch of side dishes/prep for cooking later. simple stuff like preparing minced garlic, hard boiling eggs, etc. can be as fancy as you want or as simple. makes me happy for the rest of the week :)
