This is the coolest and most surprising answer. sure to excite guests, this one probably takes two run throughs with recipe assurance and then can be cooked from memory. itā€™s sort of impossible to fuck up too bad because at the end you add 2+ cups of parmesan and a quantity of butter that makes higher powers take notice. it makes me feel like a chef, it makes my friends feel fed and happy, it makes fantastic leftovers, and in general brings a haze of good cheer that settles upon the house for 2-3 days minimum. the photo is not mine. courtesy of nyt cooking, as is the recipe.

Amazing how these things change flavor after 35 min at 425. So sweet and warm and comforting. Toss in a little harissa, honey, and sesame after and youā€™ll be floating. Credit due to brontissimo for sharing the glory of roasted carrots w moi (and now all of you).

Petition for soup to be eaten (slurped?) no matter the temp! Carrots somewhat defy seasonality and can be found in the store year-round. This recipe makes a big batch that can be portioned and frozen for later šŸ‘©šŸ»ā€šŸŒ¾ Jenna Raineyā€™s (@jennarainney on instagram) Carrot Soup Recipe: ļ»æļ»æPeel and chop 2ish lbs of carrotsļ»æ ļ»æDice one medium sized yellow onion and throw in a pot (I use an instant pot, you can use a regular pot too) with 2-3 Tbsp of grassfed BUTTAH and a dash of extra virgin olive oil, saute til translucent (about 30 seconds)ļ»æļ»æ Throw in 2-3 minced cloves of garlic for a few secondsļ»æļ»æ Add in the carrots and about 24oz of beef bone broth I like @bonafideprovisions or homemade ļ»æļ»æAdd salt and pepper and thyme (I usually do fresh) and a little more garlic powderļ»æ ļ»æThrow the lid on your pot and cook til soft and tender (I do manual high pressure cook for 4 mins with a slow pressure release for 10mins in the instant pot)ļ»æļ»æ Blend with an immersion blender (or a regular blender, just make sure it's cooled down first) VoilĆ !

Look, Iā€™m not a meal prep girl. I donā€™t get why youā€™d want soggy salads three days from now. Hereā€™s the stuff Iā€™m making to make into other things. Beans, Baby 1-2 containers cannellini beans 1/4 cup-ish onion of any kind 1 small container cherry tomatoes, cut in half 1 lemon, juice 1-2 glugs olive oil Salt Black pepper Fennel seeds Shake and put in fridge in a place youā€™ll see it. Add to salads, eat as is. Itā€™s beans, baby. Carrots Shaved into ribbons because youā€™re a fancy bitch and have a peeler. Maybe Iā€™ll season them, maybe not. Add to salads, sandwiches, eat out of the container standing in the kitchen contemplating life. Shallots Sliced Fried until crispy Place in container with lid Sprinkle in flakey salt Shake it Add to salads, soups, eat out of the container with a hunk of cheese and tell yourself itā€™s a cheese board. Roasted Sweet Potatoes 1 large sweet potato, chopped Roast how you roast things Add to grain bowls, salads or on its own. Itā€™s good, youā€™ll be so impressed with yourself when you eat it the next day. Other things that are good- Veggie lentil soup Salmon, done any way to eat any day Staring at containers stacked in your fridge on a Sunday afternoon and then ordering delivery to not ruin it.

I work three jobs and am getting my BA part time. I have hobbies, friends, and an active social appetite. Iā€™m also subject to the 24 hour day. Sometimes that doesnā€™t really feel doable. in the middle of winter, you can get an Airbnb in Burlington Vermont for $30 a night. itā€™s a small room, a bed, a window. Shared kitchen, both spare and kitschy (a notable achievement I feel). though I canā€™t afford to leave all that often, this is how I do it. I go for 5ish days, I sleep a lot, I eat well enough, I read and write a lot because I feel like I can really unload. it is so quiet, and if you wanted to go somewhere at night you could, but youā€™ll find you rarely want to. When I got off the train in Burlington it was snowing and the snow stuck to everything, even the asphalt and I just started laughing maniacally in an empty parking lot.

because heā€™s the king of the hill. obviously. and will make you feel everything. Other recs: The World Accoridng to Garp by John Irving is one of the most fucked up and disturbing books Iā€™ve ever read. feel like I almost canā€™t in good conscience recommend it. But you will feel ill! The bluest eye. Also super fucked up and sad. OH! Boy snow bird by Helen oheyemi. Unbelievably good, language is stunning, trippy but heartbreaking. ok thatā€™s the list.

they just put out their first print issue and managed to wrangle some very fun writers (from hannah baer to ed park, some deisgn by pippa garner) into writing some very interesting essays and stories. super charmed by the fact that it is printed on a kind of very thick newsprint? a unique tactile experience. its like eight bucks and they'll ship it to your lovely little home, wherever it may be. also this is a great question thank you for asking it.
