Search for true panang curry paste, palm sugar and lime leaves. It’s not the easiest dish in the world because it takes time, but this might be the best thing I’ve made all year. I’ve linked the recipe I followed.

Its the perfect weeknight meal. Quick and easy to make, but is so tasty and you get 3 or 4 portions for leftovers. You just: - cook onion and garlic and maybe ginger - cook aromatics with paste - add coconut milk, lemon juice, fish sauce, and broth/water and bring to a simmer - add raw chicken for 8 min - add what chopped vegetables you want for 2 more min - serve over rice Don't have lemon? Don't have ginger? Don't have fish sauce? Its fine! Those will make it better but it still tastes good. I would suggest buying the paste and coconut milk from a grocery store that sells asian ingredients, the stuff from the world food aisle of the grocery store is not as good but it still works
