I’m happy to eat soup for any meal of the day and any season, but in the winter especially, I love to cook a huge pot of borsht and eat it all week. It’s a bit time consuming, but so worth it and delicious. Most people add sour cream when serving, but I prefer Greek yogurt.

Nothing is as satisfying in the summer heat as a bowl of steaming hot soup. Lentils with brown and wild rice in a tomato based broth with cilantro and spinach. In part I think it’s cultural, but I am waiting for it to be uncomfortably warm before I make cocido this summer.
