I was lucky enough to be a guest at Naomi Fry and Ohad Meromi's rosh hashanah dinner where they served probably one of the most jarringly delicious things that's ever passed through my mouth. "Labne!" Naomi exclaimed to my query, "isn't it amazing?". It is SO amazing. I have since incorporated it into my day to day. I mix it with Tahini, frozen cherries, honey and cinnamon OR make a sort of deconstructed tuna noodle casserole (banza pasta, tuna, peas, labne, oIive oil, salt, pepper). You can also mix it with zatar, lemon juice and salt and you have a michelin level crudite dip.

My go to for when I need to cook something but don’t want to cook anything. Fry up a diced onion in a pot till it starts to brown. Toss in a cup of lentils and add 3.5 cups of water. Season with a decent amount of salt, bring to a boil, cover and simmer for about 20. Then stir in 1/3 cup of rice, cover and simmer, stirring occasionally, until the rice is cooked, the lentils are very tender and the whole thing has a porridge consistency, another 20-25 (but start looking out for doneness after 15). The lentils might stick at the bottom toward the end but that’s fine; let it sit for a few minutes when it’s done cooking then scrape and stir in the lentils at the bottom. adjust salt, season with pepper and if you want, cumin, and stir in about 1/4 cup of good olive oil. There’s dinner. She’s done in an hour and most of it is hands off. Deceptively tasty and satisfying for how simple it is.
