My mom always said she feels rich when she has ice in the freezer. I feel the same when I take dried beans and have a week of meals— tacos, beans and greens, beans and eggs, bean soup. It’s making something wonderful out of very little. I sang to my pot of beans this morning “you make me happy when skies are gray!!”
