A massive pot of beans

I really cannot describe how comforting it is to know that whenever I'm hungry I have 3 full taperwares of stewed black beans just sitting in my fridge.

A pot of black beans. i feel rich with happiness when i have black beans in the fridge.

My mom always said she feels rich when she has ice in the freezer. I feel the same when I take dried beans and have a week of meals— tacos, beans and greens, beans and eggs, bean soup. It’s making something wonderful out of very little. I sang to my pot of beans this morning “you make me happy when skies are gray!!”

making a pot of beans on monday

i’m not into meal prepping but i do like to make a nice pot of beans on Mondays. at some point throughout the week i will be glad to have them in my fridge and they’re easy to reheat. this week i made some anasazi beans which are very pretty and spotted when dried
