I would make this nearly everyday when I was living + working on a farm in WA last summer (spoiled bc I had access to some of the best produce Iā€™ve ever eaten) but: Veggie sandwichĀ  tzatziki on one side hummus on the other (or sometimes bitchin sauceā€¦ dealers choice) topped with avocado, lettuce, onions, heirloom tomatoes, cucumbers, cheese (again dealerā€™s choice I just had halloumi to use up that day), a little olive oil, and a very crucial element of any good sandwich: salt/pepper/season in LAYERS Second option: BLTā€¦ you canā€™t go wrong with a BLT mmmm hot tip for BLT: only lightly toast the top/outer layer of the bread so it wonā€™t scrap the roof of your mouth but full crisp the interior ofc ok bye xoxo

Mash up an avocado with a little olive oil + lemon + salt + red pepper. Spread that on grainy bread (maybe toast it if you wanna). Then pile on whatever veg you have! Cucumbers, red onion, greens, slices of tomato, peppers, whatever. You could also do garlic hummus on one side of the bread. Prettyyyyy tasty

Perfect autumnal vegetarian sandwich. From bottom to top: - whole grain mustard (fav brand is malle) - thinly sliced aged cheddar, the older the better - thinly sliced apples (I used honeycrisp) - arugula - fig jam (made by my husband from my parentsā€™ figs) Perfect for work lunch, road trip, hiking picnic, whatever!

Currently have three full pages in my notebook! I guess some might call this a gratitude journal LOL but itā€™s different when I do it.Ā  My brother was telling me about this phenomenon called ā€œtarget fixationā€. Itā€™s a panic reflex that happens when motorcyclists become fixated on a singular object, obstacle, hazard (e.g. a sharp curve on a winding road) and they will unconsciously steer in the direction of the thing theyā€™re trying to avoid because their hands follow their gaze which leads to accidents.Ā  You will follow your gaze so be aware of where youā€™re looking. Train yourself to seek out pleasure and appreciation! Understanding where + what you derive pleasure from increases your capacity to enjoy things which in turn makes you a more interesting person (imo). I think itā€™s just as important self-knowledge as understanding your triggers/trauma. It is a daily willingness to be transformed by small things. Sorry for lecturing but I want good things for all of you. Xoxo, meg
