RED PEPPER PASTA

(from Not Another Cooking Show on yt) - sweat down chopped white onions - roasted/charred and peeled red peppers (i sometimes also mix red and yellow peppers), then chopped and added to onions - add double cream - blend - add grated pecorino (best type of pasta to use with this is trofie) so tasty & light, yet unique. dare i say, better than napoletana (tomato) sauce.

Fregula pasta

So adaptable, so delicious. My current quick meal with it includes sardines with olive oil, blistered cherry tomatoes, spinach and shallots topped with lemon juice + zest, chili pepper and a sprinkle of Maldon salt.

Observing the day of the dead.

For Mexicans, the spirits of our dearly departed come back starting the 30th of October and ending the morning of the November 3rd, so we receive them with an altar filled with things they loved. Food, drinks, things related to activities, you name it. Of course marygolds, candles, papel picado, pan de muerto, and candy skulls are a must. This is my dad’s:
