Is there anything more luxurious then the simple pleasure of a soft boiled egg? Maybe marinating in some soy sauce and vinegar. 1. Bring a pot to rolling boil. slowly put in like a half dozen eggs 2. Cook the eggs for like 7 minutes. immediately transfer to a bowl filled with ice water. 3. In a bowl combine 3/4 cup soy sauce, 1/4 cup water, a few tablespoons of mirin (or a mix of rice vinegar and sugar) and some white pepper. 4. peel the eggs and marinate them in the mix for at least a few hours. congrats, you’re done. This is perfect in soup, on its own, with rice or toast, or on a salad. You can play around with ratios of stuff to your own taste. You can also play around with other seasonings or vinegars. You can also just throw the cooked eggs in a leftover jar of dill pickle juice. I swear it’s good.

I can produce very few things in the kitchen and used to turn out the grossest hard boiled eggs. But, I’ve finally learned the way to do it impeccably and wanted to share here: boil the water first without the eggs. Once boiling, use a spoon to drop your egg(s) in (this part is important since otherwise the egg will crack). Set a timer for exactly 7 minutes and cook for no more no less. Then drain the eggs and immediately soak them in cold water (add ice cubes if you have them) to make them easier to peel. And voilà, you’ve made non-gross hard boiled eggs and have an easy, high-protein lunch or lil snack ready in your fridge (eat within 2 days for best experience).

Making these this weekend for meal prep. I think I’ll put them over jasmine rice and stir fry some bok choy.

Easy to do with good instructions and feels so healthy and a little fancy. Same joy for me as a soft boiled egg but no pesky peeling :) I like them with labne and toast or on greens for breakfast, lunch, or dinner.

Sometimes you can just exist. you don’t (hopefully) need 50 hustles. You don’t need to be a writer and musician and artist and podcaster and influencer and girlboss or whatever. you don’t even need to signal how cool or smart or attractive you are. I know it’s hard cause I think our society incentives (forces?) people to be “on” all the time, but it’s probably better for your own sake to just exist for yourself and your love ones and to adjust your expectations of what a successful or meaningful life is. Sorry for being pedantic, just know a lot of friends and family my age or younger that seem to be struggling right now in all sorts of ways. Just know, regardless of what anyone says or even what you say or do, that you guys have inherent dignity and you are worth something
