Is there anything more luxurious then the simple pleasure of a soft boiled egg? Maybe marinating in some soy sauce and vinegar.
1. Bring a pot to rolling boil. slowly put in like a half dozen eggs
2. Cook the eggs for like 7 minutes. immediately transfer to a bowl filled with ice water.
3. In a bowl combine 3/4 cup soy sauce, 1/4 cup water, a few tablespoons of mirin (or a mix of rice vinegar and sugar) and some white pepper.
4. peel the eggs and marinate them in the mix for at least a few hours. congrats, you’re done.
This is perfect in soup, on its own, with rice or toast, or on a salad.
You can play around with ratios of stuff to your own taste. You can also play around with other seasonings or vinegars. You can also just throw the cooked eggs in a leftover jar of dill pickle juice. I swear it’s good.
