literally throw in whatever little tidbits you think taste good into the pot and cook that ish.
my last pot included: garlic, piece of kombo, dried shiitake, 2 dried red dates, some yellow miso paste, bay leaves, lemon peels, smoked pork tails. (this is why bean fans usually prefer dried beans because you can add the stuff that needs a few hours to simmer)
you really do just cover with cold water simmer, do not be afraid to use less water in the beginning, add more water as the beans cook. be afraid of over salting any salt you add will get concentrated as the liquid reduces
