i always do some random variation of this: go to the grocery store and pick up: 1. a few different types of protein (i usually do chicken, shrimp, and fish (even eggs could work)) 2. vegetables you like (broccoli, green beans, peppers, etc) 3. some type of carb (i usually go for pasta or rice) cook these things up with some pre made marinade or have it heavily seasoned. portion to your liking and there you go - you can make up a ton of recipes from this formula and its decently healthy πŸ˜›, its saved me a ton of time in the kitchen and prevents flavor fatigue (for me at least)

I like costco's pesto, idk, it's pretty solid for premade pesto. if you have a toaster oven, slap it on some bread, and honestly that's tasty enough without any extra. if you have a pot and a stove, I always thought of pasta as an easy meal. Sometimes I'll make it with marinara and throw the pesto on top, the two sauces do something fun. of course, neither of those will give you much protein... eggs are consistent healthy protein. I have two fried eggs + a piece of pita bread a few times every week. okay, frying them isn't *great*, but it's fine, it's still relatively healthy compared to the other shit I eat. nutritional yeast can add some protein and flavor to a lot of things. and... yeah, depending on how lazy I am, I just stick storebought fish sticks or chicken fingers in the toaster oven. it's a bad idea, but if you're that lazy and you need protein, it's a valid guitly pleasure.

Keep some noodles on hand (rigatoni). you can make a sauce with anything. Last night it was frozen chicken broth + frozen "mediterranean" vegetables. Simmered until soft with garlic, blend until smooth, toss with butter and pargm. when i'm really in a pickle its ritz crackers with peanut butter. unfortunately most nights it is a spinach smoothie

i do a few that i love but one of the easiest is lemon brocc pasta: rotini (or penne), head or two of broccoli, loooots of spinach, lots of minced garlic (store bought is ok!), few tbsp lemon juice to taste, pinch of salt and pepper, ample parmesan pasta obv takes a bit but there’s basically no prep. if you really wanna save more time/energy literally just get microwave broccoli/chopped spinach instead of fresh lol. and if you’re cooking for one, an entire box of pasta will make quite a few meals for your next lunches and dinners, and it microwaves well! so you get the home cooked meal vibe for a few days without too much work

am currently trying and will try to record more of life in 2025. whether it be through collecting receipts, jotting down an entry in a journal, recording a voice memo, or taking a simple video. i love looking at old video/photos and jounal entries to see what i did on a specific day. we always forget about the mundane
